Others have mentioned a few reasons, as I see it: 1. The Harman curve is an average. No harm in falling outside the average. Your preferences are different. No harm with that! 2.Harman's research did very clearly show this, especially for low frequencies. Also remember that headphones do have some part-to-part variation, meaning that the HD560S you have does not necessarily perform 100% identical to the ones that I measured, so some adjustment of the filters is probably needed anyway.
